I have a high appreciation for authentic southern recipes loaded with
deep southern charm. What a treat I found in Mary Lou Mott's Suthern
Hog Bay Recipes. This book is a rare gem for it introduced me
to a new culture situated in Newton County, Texas. It overflows with
mouthwatering recipes that will have readers rushing to try each one.
What I found so unique about this cookbook is the down home appeal that radiates from
each page. Each recipe is accompanied by its own author's picture and their love for hog
baying. Hog baying-you may ask yourself what is that, well I don't feel ashamed to admit
I had no idea myself until I read this book. Hog baying is a sport that is highly popular
in Texas. It centers on using hunting dogs to find wild boar. Its popularity has generated
an annual hog bay competition with cash prizes. You may wonder how such a sport found
itself in a cookbook; the answer is a mother's tribute to her deceased son, James Kenneth
Bean, Jr. who passed away March 28, 2002. Hog baying was one of his all time favorite
pastimes and loves of life. To deal with her grief Ms. Lott channeled her grief in writing
this heart-warming cookbook.
For lovers of pork, no stone goes unturned in this creative book. It is filled with
over 100 recipes that make use of every part of a pig with the exception of the squeal.
Many of the recipes I recognized from my own ancestors who have passed them down from
generation to generation. Then there are those which were all new to me such as Creole
Chops, Piggy Banker, and Road Kill. This book is for those who think outside the box
and wish to discover something new and different. You are assured to receive an ample
portion of southern hospitality. |
