Healthy in a Hurry
150 Delicious Recipes for Simple, Everyday Suppers in 45 Minutes or Less

by Jim Romanoff and the editors of Eating Well Magazine

Jim Romanoff and the editors of Eating Well Magazine have produced a beautiful new cookbook, Healthy in a Hurry: 150 Delicious Recipes for Simple, Everyday Suppers in 45 Minutes or Less. They include an introduction and appendices with tons of tips about cooking techniques, menu planning, and substitution suggestions. But it is the recipes that are the heart of the book. These recipes are quick, but oh-so-delicious. You can actually put something wonderful on the table that isn't hot dogs or a packaged hamburger dish. These recipes are good for you, and yet they aren't made of tofu and seaweed. You can make hearty Manhattan Clam Chowder, Jerk Chicken Breasts, or Spiced Pork Chops and Peaches. Each recipe has nutritional information per serving. Many recipes such as Chicken and Spiced Apples also include ingredient notes such as the explanation for herbes de Provence that you can find at your grocery store or you can make at home.

What I really like about this cookbook is that the recipes are high quality and worthy of a high-end restaurant, yet they are so good for you. Many health cookbooks will give you healthy recipes and help you plan meals that are good for your family. They may taste good, but usually, they are quite plain. This cookbook, however, offers heavenly delights that don't skimp on flavors or good ingredients, especially olive oil and lots of vegetables. There even is a great recipe for Sloppy Joes with cremini mushrooms on whole-wheat hamburger buns.

Healthy in a Hurry covers dinner salads, soups and stews, poultry, fish, meat, and vegetarian meals. There is a short section on sauces and sides in a hurry. But the section on desserts is quite short and could be expanded. There are many fruit-based desserts that are good for you and don't take a lot of time. Still, Healthy in a Hurry is a great cookbook for busy people who want to bring something elegant to their family dinner table.
